This summer, the lobby of the Radisson Slavyanskaya Hotel is featuring a new signature menu dedicated to one of the most expressive and versatile ingredients in global gastronomy: duck. Chef Margarita Guseva developed this special offering, blending unique flavor combinations and seasonal accents with her own distinctive culinary vision.

The concept is rooted in the idea of ​​harmoniously combining seemingly incompatible ingredients. The menu drew inspiration from an encyclopedia entry describing the duck as a symbol of the world’s dual nature—a realm where land and water meet without a clear boundary.

"My main goal in creating the menu was to take ingredients that appear incompatible at first glance and prepare them in a way that allows them not to clash, but to complement one another, creating a unified flavor profile," explains Margarita Guseva.

Duck is the star of the new menu, but the unifying element of all the dishes is unexpectedly cherries. They run a subtle flavor line through the entire collection, revealing the different facets of each dish and creating a cohesive gastronomic story.

Guests are invited to begin their exploration of the menu with smoked duck breast with marinated cherries. The subtle smokiness of the meat, the freshness of beetroot leaves, the aroma of thyme, and the delicate sweet and sour note of the cherries create an exquisite balance of flavors. The concept continues with a duck leg in cherry sauce, served with sautéed young cabbage and aromatic juniper berries. For those who prefer richer, homestyle flavors, the chef offers lasagna featuring duck ragù, mozzarella and stracciatella cheeses, vegetables, and signature sauces.

The gastronomic journey concludes with a chocolate-cherry jelly—a dessert where chocolate and cherry once again come together in a perfect flavor duet, underscoring the menu's overarching theme.
